THE EASIEST HIGH-PROTEIN LUNCH

IN UNDER 5 MINUTES

INGREDIENTS:

  • Wrap of Choice (I used Jalapeño Cheddar Mission which were higher calorie, but you could also find a lower calorie & higher protein option)

  • 6oz Sliced Deli Chicken

  • 1 Wedge White Cheddar Laughing Cow Cheese

  • 2 Tbsp Cilantro (chopped)

  • 1 Tbsp Red Onion (thinly sliced)

  • 1/4 Cup Arugula

  • 1 Tbsp Marzetti Simply Southwest Ranch




INSTRUCTIONS:
  1. Start by layering cheese, chicken, cilantro onion, arugula, and drizzle of dressing in the middle of the tortilla. This should form a circle in the middle of the shell.

  2. Wrap left side over, then move clockwise with five folds to create sort of a pentagon shape. Doesn’t need to be perfect, but just do your best!

  3. Spray a hot skillet and then add wrap to the pan, seam-side face down first to seal it up. While this side cooks, spray the uncooked side with cooking spray, and then flip and cook until browned, hot and melty inside.

  4. Serve with a drizzle of the dressing or dip in more dressing or salsa.


ADJUSTMENTS:

-Can use Deli Chicken or 4oz Pulled Rotisserie Chicken, 4oz Grilled Chicken Breast, or 4oz Shredded Chicken for similar protein content, but different source

-For more fats / calories, try adding 1/4-1/2 of an avocado in addition to other ingredients

-Can also had 1/2 large tomato sliced to ingredients, I just personally don’t like tomatoes on things that are heated up like this

-For more protein, pair with high-protein snack/side like a 1/2 cup greek yogurt parfait or a 1/2 cup cottage cheese and fruit
